If I make this everyday at home, my husband will be very happy. I have seen varying ways to make this on the internet and have tasted it in many Thai restaurants in the US and in Asia. The ingredient, in my opinion, that makes it taste really special is the kind of basil you use. Of course you can use any basil you want and the dish will still taste good but using Siam or Thai basil gives it the distinctive taste.
- 4 or 5 thai chillis
- 5 cloves garlic
- 1 tbsp oil
- 1 tsp fish sauce
- 1 tsp sugar
- 500 grams chicken cut into bite size pieces ( I use dark meat )
- 1 cup basil leaves
- 1 tbsp oyster sauce
1. Using a mortar and pestle, pound garlic and chillis together. Heat oil in pan and add garlic/chilli mix.
2. Add chicken pieces and saute until chicken is cooked. Add fish sauce and sugar. Continue cooking for 3 – 5 minutes until a little bit of sauce starts to form.
3. Add basil leaves and oyster sauce. Stir for 1 minute. Serve with rice.
