Tropical Soy Ice Cream

Ingredients:

1 cup soy milk vanilla flavor
1 cup blended or mashed tropical fruits (I used papaya and kiwi)

Directions:

1. Mix all ingredients.
2. Following manufacturer’s directions, pour blended fruits into ice cream maker.

This took only 20 minutes to make. And they are so refreshing. This yielded 1 quart of ice cream so now we have some in the freezer for late night snacks!

Next time I will try to make it with cheese. I remember Lolo Iyong (my grandfather) making this delicious ice cream. Hmmmm…I should try all the flavors I can remember–keso, ube, buko, mango…yummy!!!
