Nutty Brownies Sugar Free

I didn’t expect this sugar free brownies to taste so ‘chocolatey’–but they are! It was adapted from this sugar free brownies recipe. I added nuts and bittersweet chocolate chips and made a couple of minor adjustments. You just have to try this….
Ingredients:
- 1 stick butter, softened
- 1/4 cup unsweetened cocoa powder
- 2 eggs
- 1 cup Splenda granular ( or any artificial sweetener)
- 3/4 cup all-purpose flour
- 1/8 teaspoon salt
- 1/4 cup soy milk
- 1 cup bittersweet chocolate chips
- 1/2 cup pine nuts(optional)
Directions:
- Preheat oven to 350°.
- Grease and flour an 8×8-inch pan.
- In a small bowl, melt butter in microwave (20 seconds) then add cocoa powder, stir until well mixed. Set aside to cool.
- In another bowl, beat eggs until frothy. Add sugar substitute.
- Combine the flour and salt; stir into the egg mixture then mix in the cocoa and butter.
- Finally stir in the 1/4 cup of milk, chocolate chips and pine nuts.
- Pour into the prepared pan bake for 25-30 minutes in the preheated oven.
- Stick in a toothpick–when it comes out clean its done. Let cool and then cut into squares.
