Nutty Brownies Sugar Free

I didn’t expect this sugar free brownies to taste so ‘chocolatey’–but they are!  It was adapted from this sugar free brownies recipe.  I added nuts and bittersweet chocolate chips and made a couple of minor adjustments.  You just have to try this….

Ingredients:

  • 1 stick butter, softened
  • 1/4 cup unsweetened cocoa powder
  • 2 eggs
  • 1 cup Splenda granular ( or any artificial sweetener)
  • 3/4 cup all-purpose flour
  • 1/8 teaspoon salt
  • 1/4 cup soy milk
  • 1 cup bittersweet chocolate chips
  • 1/2 cup pine nuts(optional)

Directions:

  1. Preheat oven to 350°.
  2. Grease and flour an 8×8-inch pan.
  3. In a small bowl, melt butter in microwave (20 seconds) then add cocoa powder, stir until well mixed. Set aside to cool.
  4. In another bowl, beat eggs until frothy. Add sugar substitute.
  5. Combine the flour and salt; stir into the egg mixture then mix in the cocoa and butter.
  6. Finally stir in the 1/4 cup of milk, chocolate chips and pine nuts.
  7. Pour into the prepared pan bake for 25-30 minutes in the preheated oven.
  8. Stick in a toothpick–when it comes out clean its done. Let cool and then cut into squares.
