Prawns and Asparagus Stir Fry

Quick and easy, as with all stirfrys.  And you can add a little sweet and sour flavor by using ready-made sweet chilli sauce (optional, of course!).

Ingredients:

  • 500 grams prawns, peeled and deveined
  • 3 cloves garlic
  • 1 yellow bell pepper, diced
  • 5 stalks asparagus, cut into 2-3 inch pieces
  • 1 tbs soy sauce
  • 1 tsp crushed chili pepper
  • 1 tbs oil
  • 1/3 cup water
  • 1 tbs sweet chilli sauce (optional)

Directions:

  1. Heat oil in wok or saute pan on medium heat.  Add crushed chili pepper and garlic and stir fry for 2 minutes, making sure garlic does not burn. Add bell pepper.
  2. Add prawns and cook until pink.  Add asparagus and water, cook for another 2 minutes then add soy sauce.  If using, you can add sweet chilli sauce (1 tbs) now.
  3. Stir for another minute then transfer to a serving plate.  Serve hot with rice.
