An Early Birthday Present

I received a very nice surprise in the mail a few days ago. Well, it was actually my UPS delivery guy who delivered the package. My friends Carlos and Rodney sent me a silicone baking set as an early birthday present! We had the kids and grandkids for Easter week so I didn’t have the chance to properly say THANK YOU! I have a similar set in red and they sent me a black one. Not that the color matters…but having another set was just perfect! I’m taking this one to San Diego when we leave in a couple of weeks. In the meantime, I would like to “break them in” by making some goodies I can send to my two wonderful friends!
I was sorting through my cookbooks, trying to decide which ones to take with me to SoCal, when I came upon a couple of George Stella books I’ve had for years. George Stella hosted the “Low Carb and Lovin’ It” show at Foodnetwork a few years back. He lost a lot of weight using low carb ingredients and my friend Carlos is into the low-carb lifestyle. I couldn’t have a better “light bulb” moment! As my way of saying “thank you” to Carlos and Rodney (and breaking in my new baking set!), I decided to do a series of low carb recipes and post them in the next few days (or maybe until my birthday!). I already have a few recipe tweaks in mind just from browsing through Stella’s books! And since I know I have some people who watch their sugar intake (hint, hint to my sister) read my blog once in a while, I’m calling it my LOW CARB, ALMOST SUGARLESS series.
Any of you have low carb, almost sugarless recipes to share? If I can find the ingredients, I’d be happy to give it a try.
