Mango Brie Quesadilla

A quick and easy snack. Make sure you use very ripe mango to get the nice combination of sweetness of the fruit and saltiness of the cheese.
Ingredients:
- 6-8 thin slices of very ripe mango
- 2 inch cut of Brie, divided into 8 smaller pieces (or dots)
- 1 large flour tortilla, regular or flavored (I used cheddar jalapeno but any flour tortilla will work)
Direction:
- Lay mango slices on half of the flour tortilla. Dot with brie cheese, spreading over the same half part.
- Fold the other half over to make a “half moon” tortilla.
- Warm in medium heat frying pan and brown one side or until cheese is melted. Flip to quickly brown the other half.
- Cut into wedges and serve warm.








this looks yummy and easy to make. we’ll be harvesting
mangoes next month, will surely try this out.
What a fabulous way to jazz up a quesadilla. I adore mango and brie together, so why not stick them in a nice tortilla and make a quesadilla. I’ve got to make this for my boyfriend; he loves these flavors! By the way, I send your salmon recipe to my mom, and she’s going to make the matzoh-crusted salmon for her Passover dinner! She is super excited about the recipe.
My family would love this quesadilla – it has our favorite fruit and our favorite cheese – perfect!
