Salmon with Dill and Lemon Butter Sauce

Ingredients:
- salmon fillet, cut a 4-inch portion from a whole fillet
- juice of 1 lemon
- 2 tbs butter
- 2 tbs chopped fresh dill
- salt and pepper to taste
Directions:
- Place salmon fillet in a microwave-safe dish.
- Cut butter in 2 – 3 smaller pieces and place on top of salmon fillet. Add juice of one lemon and dill. Season with salt and pepper.
- Microwave on high for 2-4 minutes, depending on how thick the salmon is. You can microwave in 1 minute increments and check for doneness.
- Serve hot with salad or steamed vegetables.
When salmon fillet is on sale, I often make one serving portions (as above) of these and place them on freezer ziploc bags. I place the salmon first, then top with cubed butter and dill and slices of lemon. They freeze well and very convenient. I just take one bag out of the freezer and pop it in the microwave for a quick lunch or light dinner. If you have one of those Foodsaver vacuum pack machine, that is even better!
