Seafood Crepes

Whenever I make a batch of crepes, this dish almost always shows up for lunch or dinner.   You can use any mix of seafood such as shrimp, crabmeat, squid, etc combine with simple bechamel sauce and use as filling for the basic crepes.  Top the rolled crepes with cheese (any quick-melt will do) and bake for a wonderful, delicious lunch or dinner.  A simple green salad as a side completes this meal.

Ingredients:

  • 1/2 cup shrimp, cooked
  • 1/2 cup crabmeat
  • 2 tbs butter
  • 1 tbs flour
  • 1 cup milk
  • salt and pepper to taste
  • 4-5 crepes
  • 1/2 shredded parmesan ormonterey jack cheese

Directions:

  1. Preheat oven to 350F.
  2. Melt butter in saucepan. Add flour and cook for 1 minute.  Add milk and stir.
  3. Add crabmeat and shrimp and cook until filling is thick.  Season with salt and pepper.
  4. Place 1 – 2 tbs of filling in the middle of crepe. Roll place on a baking dish.  Continue with the rest of the crepes.
  5. If there are any leftover filling, pour the filling on top of rolled crepes.  Sprinkle with shredded cheese.
  6. Bake for 20 minutes or until cheese on top is melted.
  7. Serve hot.

Notes:

  • You can also use store-bought seafood salad instead of cooked shrimp and crabmeat.
  • If you have ever bought lobster bisque at Costco or even the triple creme lobster soup at Von’s or Safeway, I often use this as additional sauce.  Pour over the rolled crepes until covered and then sprinkle with cheese before baking.

First of all, I adore crepes. There’s something super special about them. Usually, I go for the sweet crepes, but how could I turn down a crepe stuffed with shrimp and crab (and not to mention, the cheese)?! These crepes look and sound totally delicious. In fact, I wish I could have one right now!
