Yia Yia’s Rice Pudding by Nick

Our 17 year old grandson Nick made rice pudding yesterday. He called his Yia Yia Rena to get the recipe. They really love her rice pudding so Nick decided to make it exactly the way his Yia Yia made it for them. It took long to make (too long for impatient Nicholas) and even longer to chill in the refrigerator. But we eventually enjoyed the pudding last night after slices of pizza. Nick didn’t think it was as good as Yia Yia’s but I thought it was delicious! I had two bowls, adding chocolate syrup in mine. Here’s the recipe:
Ingredients:
- 1/2 gallon milk
- 1 1/2 cups white rice
- 1 cup sugar or splenda
- 1 cinnamon stick or 1 tsp cinnamon
Directions:
- Combine milk and rice in a pot and cook in low heat. Stir continuously so as not to burn the bottom.
- When liquid is almost gone, add sugar and cinnamon. Continue cooking until rice is soft and cooked.
- Remove from heat and transfer to a container.
- Refrigerate at least two hours.
- Serve cold or warm (microwave it). Add more sugar or cinnamon as you like.

Go Nick! Everyone loves a guy who can cook/bake! His rice pudding sounds just fabulous, and I love that you added chocolate syrup to yours. Yummy!
