Roasted Salmon with Sour Cream Dill

This recipe was adapted from Martha Stewart’s Roasted Salmon with Herbed Yogurt recipe. Instead of yogurt, I used sour cream.

Ingredients:

  • salmon fillet with skin, (one side)
  • 1 cup sour cream
  • 2 tbs dijon mustard
  • 1 bunch dill, chopped
  • salt and pepper to taste

Directions:

  1. Preheat oven 350F.
  2. Season salmon fillet with salt and pepper. Line a baking pan with parchment paper or banana leaves (if available). Place salmon fillet on pan skin side down. Set aside.
  3. In a bowl, mix sour cream, mustard and dill.  Spread over salmon fillet.
  4. Bake/roast in oven uncovered for approximately 20 minutes (depending on how thick fillet is) or until cooked (not too dry).
  5. Serve warm with lemon wedges.

I do enjoy a good salmon dish like this! This would be great with a nice pasta side dish or a fresh cucumber salad. Mmmmm . . .

Ooo, I love that you changed this recipe to use sour cream. I like the thicker texture. And of course, dill pairs so nicely with salmon. This could definitely be a new favorite meal for me. Great job!
