Roasted Salmon with Sour Cream Dill

This recipe was adapted from Martha Stewart’s Roasted Salmon with Herbed Yogurt recipe. Instead of yogurt, I used sour cream.
Ingredients:
- salmon fillet with skin, (one side)
- 1 cup sour cream
- 2 tbs dijon mustard
- 1 bunch dill, chopped
- salt and pepper to taste
Directions:
- Preheat oven 350F.
- Season salmon fillet with salt and pepper. Line a baking pan with parchment paper or banana leaves (if available). Place salmon fillet on pan skin side down. Set aside.
- In a bowl, mix sour cream, mustard and dill. Spread over salmon fillet.
- Bake/roast in oven uncovered for approximately 20 minutes (depending on how thick fillet is) or until cooked (not too dry).
- Serve warm with lemon wedges.








mmmm… Salmon. Healthy and delish. Sounds tasty with that sour cream dill.
I do enjoy a good salmon dish like this! This would be great with a nice pasta side dish or a fresh cucumber salad. Mmmmm . . .
Ooo, I love that you changed this recipe to use sour cream. I like the thicker texture. And of course, dill pairs so nicely with salmon. This could definitely be a new favorite meal for me. Great job!
