Vegetarian Spring Rolls


This is the supersize, meatless version of the ubiquitous Filipino lumpia or spring rolls. Filled with crunchy vegetables and served with vinegar and chili sauce, these are one of my favorite snacks.  I remember in high school when I used to take the train from school to home, food vendors were allowed to sell these in the train.  They were huge and had chopped sweet potato and bean sprouts as filling.  The vendors would have the vinegar and chili sauce ready to be sprinkled on each roll.   It was a 40 minute train ride so by the time I take the connecting jeepney ride home, I am so full I cannot eat dinner anymore. I don’t make these often here in the US.  (My husband prefers the little version with ground chicken or ground turkey.) So when I do, it certainly is for lunch or dinner, not as a snack!


  • 1 cup fresh bean sprouts
  • 1/2 cup shredded carrots
  • 1/3 cup chopped coriander
  • 1 cup shredded cabbage
  • 1 tbs fish sauce
  • ground pepper to taste
  • 4 pcs spring roll or lumpia wrappers
  • 1 cup vegetable oil for frying

Vinegar and Chili Sauce

  • 1 cup white vinegar
  • 4 thai bird chilis,  chopped
  • 4 cloves garlic, mashed
  • salt and pepper to taste



  1. Mix all ingredients (except lumpia wrapper) in a bowl.  Add ground pepper or crushed chili pepper if you want it with a little kick.
  2. Prepare lumpia wrapper. (keep wrappers covered with damp towel to prevent from drying). Divide filling into 4 and fill each wrapper, laying filling on the center.  Roll (Bottom part up, fold left, fold right and then roll. Dampen tip with water to seal)  and set aside. 
  3. Heat oil. Deep fry rolls until light brown.  Place in wire rack or paper towel to drain off excess oil.
  4. To make sauce, pour all ingredients in a jar and shake.
  5. Serve rolls with sauce on the side.
