Curried Seafood Mix in Rice

Seven days before our 70s Disco Party and I am posting recipes??? I must be nuts! Anyway, the cleaning continues and the next stop is my freezer. I need at least two shelves (I hate the side by side refrigerator!!!) cleared. So I’ll start with two packages of frozen seafood mix which I often use in sauteed vegetables. Cooking it with garlic, onion and tomatoes, I mixed it with leftover cooked rice, added turmeric and curry powder (and a couple of okra from my garden) then baked it in the oven until all liquid has been absorbed. Perfect for lunch on a busy weekend!
Ingredients:
- 2 packages seafood mix, defrosted
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 1 can chicken broth or water
- 3 large tomatoes, diced
- 1 tsp crushed chilli pepper
- 1 tbs Cajun seasoning
- 1 tsp turmeric
- 1 tsp curry powder
- salt and pepper to taste
- 2 cups cooked white rice
Directions:
- In a large Dutch oven or oven-safe pan, saute garlic, onion, tomatoes in oil. Add seafood mix, broth, seasonings and rice.
- Bake, uncovered, at 325° for 30 minutes or until heated through, stirring after 20 minutes.

I’m not a huge fan of seafood… but this dish looks great!
My mother-in-law made a curried shrimp dish that my husband loves but this sounds like a great alternative! Maybe a little yogurt to give it the extra creaminess that he remembers (his mom used sour cream) – this looks delicious!
